Pineapple Hopia Recipe


Hello Everyone! How was your week doing so far? Last week, my daughter started kindergarten and I couldn't be more happier. It's been a hectic schedule for me and still getting used to my new routine. I'm so happy to share that my kindergarten made her first week. She definitely love school! Anyways, talking about school and what not? I have a really awesome recipe that you could make for school lunches and even perfect for any special occasions. Pineapple Hopia is a perfect after school merienda that your kids will love and enjoy.  First, lets talk about what is HOPIA?- its basically a pastry dough filled with sweet or savory filling. It's flaky, sweet and just simply delicious. It's very popular in the Philippines for snacks and favored gifts to friends and relatives. This is also one of my favorite snack!  So, the other day I made a Pineapple Hopia for my family and it was a SUCCESS! Hopia is usually filled with Mungbean paste or Ube ( purple yam) Since, I don't have those ingredients on hand. I used crushed pineapple instead. It was delicious! The flavored just blend in with flaky hopia and the sweetness of the pineapple. Yum!- That's the story behind this Pineapple Hopia (wink)
The recipe was inspired by my desire to munch on some hopia. I terribly missed it! and now I'm so glad I'm able to just make my own anytime I want. I found the dough recipe online (totally forgot the site) and its super easy to make. I suggest to give the Pineapple Hopia a try but the Classic Hopia flavor is also really good. Ingredients:
- Notes: Feel free to used available hopia filling you have like Monggo Beans, Ube or Pork.
 
Hopia Filling-
(1) 20 0z can Pineapple crush
1/2 cup sugar

- Notes: Put the dough mix in two separate bowl.
Dough #1 
2 cups of flour
1/2 cup oil
1/2 cup butter
Pinch of salt

Dough #2
1 1/2 cup flour
1/4 cup shortening
1/2 cup butter
1/2 cup sugar

- Eggwash - for finishing touch. 

Directions:

1.) Cook the filling by combing the pineapple and sugar into a pan. Stir and mix until the pineapple feel sticky and the juice dissolve. Set aside and let it cool.
2.) Now, Its time to make the dough by mixing all the ingredients separately for dough#1 and dough#. I suggest to used different color bowls when mixing the dough.
3.) After you mix the dough separately. Take dough#1 into light floured surface and roll it flat about 1/2 inch thick. Put dough#2 on the top and spread it nicely around dough#1.
4.) Carefully roll the dough, gather the edges and set it aside. Repeat the process until all the dough is roll up.
5.) Preheat the oven onto 400 Fahrenheit.
6.) Sliced the roll dough into small pieces, see the photo below for reference. Roll the sliced dough into lightly floured surface, put the filling on the middle, collect on the side and form it into little ball and flatten it before putting into the pan.
7.) Repeat the process until all 18-24 hopia is done. The size varies depending on how big you want it to be.
8.)Brush the Hopia with eggwash and bake for 15-20 minutes or until its golden brown on top.
9.) Enjoy your fresh bake hopia. Yum!



Pretty easy huh? I told you and its delicious!. I think this is the best time to bond with your friends and simply make some hopia while waiting for your kids to get home. I enjoyed the whole process of making Hopia, I think its so much fun! especially when you smell it all over your house.

My First Lemonade Stand Experience with Truvia


Hello Everyone! It felt like I never blog for like forever. I just never get a chance to just sit down, collect my thoughts and write. It's been a busy and great summer for us, can't complain!:) We attended two family reunions, went to vacation at Outerbanks, NC and I hosted a Truvia lemonade stand last Friday. Yippee! It's my first time to do lemonade stand and the whole experience was AWESOME! My kids are also pretty active and been so helpful in their own little ways. It's perfect summer celebration before the school starts and great day to just have fun and play outside with other kids.

Fresh-Squeezed Lemonade with Truvia Natural Sweetener Recipe  (see the source: truvia.com)
 - Adjust the ingredients and the taste according to your preference:)

 Ingredients:
1 3/4 cups of chilled water
4 tbsp fresh squeezed lemon juice, about 1 large lemon
1 tbsp + 1/2 tsp natural sweetener spponable or 4 packets Truvia natural sweetener

Directions:
- Combine the ingredients and stir to dissolve.
- Served over ice.

Summer won't be complete without fresh lemons right? So,This is a perfect way to satisfy that cravings with this super easy Fresh-Squeezed Lemonade with Truvia Natural Sweetener. Adjust the taste of the lemonade to your liking and when its set. Just let it cool on the refrigerator, add some sliced lemons and ice cubes before serving.
Lemonade Stand tips:
Create a Creative Lemonade Sign- Try to be creative without spending money. It is also a great opportunity to bond with your kids and recycle scrap papers if you have some. I used left over scrap paper from last month and this is what we came up with.- Check the photo above.
Table Design for Lemonade Stand - This is a great way to used that left over table cover from your kiddies birthday and left over balloons. Have fun and let your kids be creative.

Sweet Dessert Creations- It's always nice to make something sweet addition to your lemonade. You could make brownies, cookies, sweet tart, or even cupcakes. In my case, I made a mini muffin/cupcakes with colorful icing using the Truvia spoonable. I also add sprinkles where my kids enjoyed the whole experience. Below is so far the easiest frosting you could make in less amount of time not to mention its really GOOD!:) Let me know if you try it..:)

 Cream Cheese Frosting with Truvia Recipe ( http://truvia.com/recipes/cream-cheese-frosting)

Ingredients:

16 oz cream cheese, softened- I used Philadelphia brand
1/4 + 2 tsp Truvia natural sweetener spoonable
1 tsp vanilla extract
1 tsp milk ( optional )

Directions:
Place the cream cheese and Truvía® natural sweetener into medium mixing bowl.
Mix on low speed for 1 minute to combine.
Add the vanilla.
Mix on low speed 1 minute until creamy and blended.
Add 1 tsp of milk, if necessary, for thinner spreading consistency.
Spread on cooled cake and cupcakes.
- I added food coloring to my cream cheese icing and sprinkles.

Grab the Lemonade jar on the refrigerator add some ice cubes and your are ready to go! I also added  flower on both end of the table to make it look so pretty! You can also used ribbons if you have some. I also printed the recipe of the Truvia Lemonade and the cream cheese frosting and place them beside the product. Now, Truvia lemonade stand is OPEN! wink:)

It was such a great experience and I LOVED it. I would definitely love to do it again when I get a chance. I'm so thankful to my family and friends for coming over and being so supportive. The experience was pretty awesome and I'm just so lucky to get a chance to host my very first lemonade stand with Truvia :)

Glorious Outerbanks Vacation 2014

Outerbanks Vacation Escapades


Hello Everyone!
I'm officially back from my great week vacation with my loving family...and Guess what? I'm missed you all! It's been pretty fast month for me, I felt like, I started to felt that vacation mode and the next thing I know, It's time for us to go back. Time went so fast when your having fun, "ika nga" But, Hey! I'm bringing those sweet, unforgettable and fun memories with me and I'm beyond excited to share it with you:)  Are you excited? Come on, hold my hand and join me, As, I uncovered my everyday fun food escapades, great beach adventures and my relaxing moments at Outerbanks.
Here we go!..wink:)

Outerbanks is the place where I can relax and enjoy every moment of it. Actually, I remembered blogging about my last year Outerbanks vacation.:) So, Anyways, Let's start the adventures by driving more than 11 hours. Yup! I know its exhausting thinking about it, but it was fun. We packed snacks and drinks with us and the movie LEGO is great entertainment for everyone. I actually, enjoyed it. " Everything is Awesome!!!"fast forward- We finally arrived at Windjammer the place where we always stay. Everything you can think of that perfect place for vacation, close access to the beach, gift shops, restaurants, indoor pool and hot tub.. and more.
Sunday- We went to the beach and then to the pool. Then we ate out in celebration of Granny's 75th birthday at The Dunes restaurant. The restaurant is amazing, very pleasant ambiance and so relaxing. I really enjoyed my food which is Blackened Mahi-Mahi with tropical salsa topping, Dunes Rice and summer veggies on the side. The dessert is scrumptious! I can't stop going back for more bite and more and more.. until its gone! I have a chocolate mouse cake with whip cream... I should stop! I'm drooling right now hahaha.


 As part of this awesome vacation is our family dinner together. The deal was, one family member should volunteer to make dinner for everyone. Which is pretty cool you think? I think so too. Anyways on our second and third day is pretty much hanging out on the beach and in the pool area. 
Monday- Granny made us meatloaf, mashed potato and green beans. It's really good!
Tuesday- Tacy ( my sister in-law) made us crabcake and corn- I can't get enough of it. It just that good!:)
 -We also explore the Tangler outlet and Wings for some shopping galore! It was really fun..promise!


 Wednesday- It's Quinn's birthday ( my niece/ Tacy's daughter ) The whole family went out for Dophin Watch Tour! I'm so excited! I never seen dolphin up close and I think its really fun experience for my kids too, seeing the dolphin and riding a boat. I surely was right, my kids loved it. Too bad we didn't see dolphin that day but the tour is amazing.  I enjoyed just looking the scenic views and the smell of fresh sea water.
The Dinner was Pizza and of course CAKE! It was unforgettable...


Thursday- If there's like " Beach Day" kinda day, This is the day! We pretty much just being at the beach all day long. My kids loved playing with the sand, we made some cute a.k.a "sand castle". I get to experienced to be buried alive on the sand and so my kids.
Sunbathing- check!
Picnic at the beach- check!
Relaxing- check!! check and more! It was so much!! and I made Beef and Broccoli for dinner! wohoo!! and can't be complete without my chocolate fudge brownie with lemon icing for dessert. Its kinda strange that chocolate and lemon together but it works...wink!:)

 Friday- Our last day at Outerbanks and we are making most out of it. Started off by taking a long walk at the beach with my kids, hitting the beach early and explore every minute exploring the place. My Mother in-law ( Cheri) made salad, baked beans, baked chicken, potatoes and tater tots and ice cream for dessert. Then, we head off to Jockey's Ridge.. how amazing! My kids have full of energy just running up and down at giant sand dunes. We also watched the beautiful sunset..and went out for souvenir shopping.

 We drove Friday night and got home Saturday afternoon.Vacation with family is priceless and a moment to be treasured for the rest of my life.
